Hey, we chose to have our Bailey spayed before going in to heat, so I haven't "witnessed this" other than the poodle I grew up with. I googled for you and found this article on Banfield's website. I'm not promoting them, just thought the article was pretty good. Oh yes, you will definitely know when there is blood. If you really look, you will notice that the vulva starts to swell even before this stage. You can wipe with a tissue and see if there is blood if you suspect she is close.
From what I've read, it is best to wait for some time after the heat cycle is passed before spaying to let the hormones get back to normal.
Also, if you can check with the breeder to see when the mother went into heat for the first time, that might give you an idea. Hazel was close to a year old when she went into heat the first time, so you might have a while to go.
