it seems like HV knows the breeder so that is good ... but I would like to know why they are breeding three litters at once...

If it where my choice and based on pedigree only...I would go Junior x Chelsea. I would prefer to interact with the dogs before truly making a choice.

She said that two of the girls have pyometra. Is that bad?

Pyometra is a uterine infection... it is very dangerous and a girl who is treated for a pyo needs to be bred on their next season .... that having been said I think its really strange for two girls to both get a pyo at the same time....and then why did she breed the third?

I like cuervo x shiner..they look like nice looking dogs. Im a little curious too on why she would do 3 and they seem awfully young to have pyos. Usually seen them over 5 years of age. But clearances are there. Maybe she has lots of help!

My preference, based upon appearance alone, is Cuervo x Shiner. Both the sire and the dam are appealing to the eye. I only glanced at the pedigree but I noted the dam has excellent and sire has good rated hips and the other clearances look good.
This would be my choice.
Let us know which breeding you like. It really is matter of personal preference, if everything else falls into place.
Good Luck!

The longevity on dad's side is something I would look into and discuss with the breeder with Cuervo.
