I have no idea. I have all these great recipes on Pinterest to try, but always am missing on ingredient or another. I just need to print them out and make a list.

tonight I'm planning on chicken and sausage links in a tomato sauce with some spices and veggies in the sauce as well. Then probably my new favorite salad with lettuce & strawberries & blueberries & goat cheese with a home made raspberry vinegrette

Lunch:
A BLT salad...but with tofu, not bacon. Basically a raw kale salad with julienned carrots, sweet onion, tomatoes and a homemade dijon dressing. Topped with smoky-miso tofu and croutons.

Snack: Tropical Green Smoothie (mango, pineapple, banana, orange, crushed ice, and a few fistfuls of spinach)

Supper:

For those who don't want to click the link - I'm lazy like that, too - it's a raw kale/chard salad with chickpeas and avocados, optional tangerine/satsuma/orange as a side, with a "sunny maple tahini dressing".

I'm trying to increase my veggie/fruit intake in the hopes of eating less breads and grains these days. So far so good...my fruit/veggie intake was around 20 yesterday!

I'm reading through this and thinking what great meals...as I had a bowl of Cheerios for dinner. Fortunately this is a pretty rare occasion but from time to time I make do...but I'm all set to go with the meat loaf now after having read through that thread. What I'm really looking forward to is the sandwiches with the left overs.

Thanks!!! I am having a fabulous day. DH spoiled the surprise. Dinner is lasagna. Im so excited!!!!! We're throwing a party on Saturday. My first birthday party EVER! I hope it doesn't rain.
