Tonight, I made stuffed acorn squash. It. Was. Amazing. Seriously unbelievable. Here's a link to the recipe: Sausage Stuffed Acorn Squash « Real Food Freaks

I used hot Italian sausage, subbed thyme for sage and rosemary, and left out the almond meal. Will make again. It paired nice with red wine.

Lunch was a taco salad ..lettuce, tomato, fiesta corn mix, seasoned ground beef and shredded cheese with tortillas strips. Dinner....thin sliced boneless pork chops dipped in shakenbake and pan fried, green beans and a royal rice blend.

You guys are making me feel guilty, though. Guess I need to star eating a bit healthier.

Tomorrow's dinner will be chicken & vwggie stir fry over jasmine rice.

I've made similar stuffed squash recipe and it is amazing!

Smoothies are quick and easy and can be very healthy!
I do mine with some chia seeds, big handful of spinach, a bit if coconut milk, and a little frozen fruit (pineapple/mango/strawberries). I just do mine in a regular blender, it takes maybe 3-5 minutes to get it well blended

Wow... I am seriously impressed by some of the culinary skills here. I love to cook too.

breakfast... coffee
Lunch... chicken sandwich with chicken left over from chicken noodle soup.
Dinner... homemade lasagna with a salad and homemade salad dressing

tomorrow... leftovers

No dinner for me tonight. But, that's only because I just returned from visiting my parents in Florida over the long weekend and my mother wants to feed me like I'm a growing boy still. I actually ate in a Waffle house and a Steak and Shake yesterday...and it is hard to eat vegetarian at a place like steak and shake, but they recently added a veggie melt to the menu, which was pretty good. (We don't have steak and shakes around here, so this might not be news to regular customers )

I never heard of one until last year, but they are all over Florida. It is a retro burger place that serves meat and shakes, and once in a while, a veggie melt.

There is nothing wrong with your lunch and dinner. It is healthy to me
But I am surprised so many members drink smoothie. I like smoothie too

Looking for more healthy food and drink recipes, and of course cost savings is a "star"

What did you say? chip for supper ??? Nice
I crush potato chips and use them as a coating on chicken. It's quite tasty!
