Breakfast will be a green smoothie - coconut milk, greek yogurt, strawberries, banana, scoop protein powder, spinach and a bit of maple syrup (thanks to this forum for the smoothie ideas
My parents are coming out for lunch so I'm making butternut squash soup and paninis - ham/cheese, eggplant/proscuitto/parmesan, tomato/eggplant/parmesan, tomato/proscuitto/parmesan.
Supper - no idea yet - might be light after this lunch.

I do, but it's all vegan Delicious, but a little different for people who are used to cheese and meat to make up a meal.

My only tips if you're browsing for a meal to make: skip the ones that call for replacement meats or cheeses, and tofu - unless you're used to it! They can be a little hard on the tastebuds at first.

Here are my go-to websites:

ohsheglows.com Really good recipes that don't usually call for any replacement meats or cheeses - just normal stuff used in new ways. Lots of fruits and veggies.

blog.fatfreevegan.com Same as above - just whole foods in the recipes. Focus is on low fat meals.

VeganYumYum | Yup, I'm back. This website is a little 'fancier' and the recipes are a little more time consuming. This is where I go when I need to impress non-vegans!

kblog.lunchboxbunch.com THIS is my fav website for vegan recipes. I just found it a few weeks ago and my god, it's amazing. Not one recipe has let me down! It has more tofu, tempeh, and meat/cheese replacements but not all the recipes do. She also has segments on a "meatless mondays" that's geared towards non-vegans.

I have more if you're interested, but these are the ones I go to most of all! My lasagna recipe is a compilation of 4 different vegan lasagna recipes I got from these sites!

And this is what I'm making for dinner, tonight: Healthy Hash Brown Casserole | recipe from FatFree Vegan Kitchen

Thank you!! The recipes on the websites look delicious and the instructions seem easy enough to follow. Iím a failed vegetarian, now I rarely eat red meat but itís the chicken and fish that I have a hard time staying away from. Iím excited to try some of these recipes!! The Hashbrown casserole looks soooo good! Let me know how turns out. I might have to try it this week.

What is your Menu today?

I made these muffins this morning. This recipe has been around awhile but it's one of my favorites.

Pumpkin Muffins

1 Betty Crocker Spice Cake Mix
1 15 oz can 100% Pure Pumpkin (that's it!)

Mix them together and spoon into a 24 count mini muffin pan. (Sprayed with Pam) They will be full to the top. Bake at 350 for 15 minutes. They are delicious and moist.

mudEpawz - I couldn't do vegetarianism, but I've found veganism to be much easier. I think it's because it calls for a complete overhaul in the way meals are thought of and cooked, whereas vegetarianism is cooking the same way but just eliminating meat. If that makes sense. I always cooked before I went vegan but I've completely overhauled the recipes I used to make. I use spices and seasonings all the time and I never used them much before. I've found when you can't rely on cheese as a seasoning you have to cook in a much different way, especially when vegetables are the main dish! I love it...could never go back, ever, to cooking/eating the way I did before.

Turns out I'm not making the hashbrown casserole...I made a "green goddess bowl" instead - quinoa, peas, corns, julienned carrots, broccoli, onion, spinach. Seasoned with lemon juice, orange juice, liquid smoke, and some seasonings. Topped with hot sauce and avocado! Soooo full!

This evening I'm making:

Sweet potato shepard's pie (with ground turkey) for tonight + a few meals this week.

A quinoa/red rice/sprouted rice greek salad to have on-hand for work lunches.

Boiling some eggs for quick morning grabbing all week.

Juicing for Mon-Wed juice. "Mean green" each day + also making a citrus + carrot/apple/ginger.

Wow, I better get going... Sydney's evening walk first before dark!
