| Breakfast will be a green smoothie - coconut milk, greek yogurt, strawberries, banana, scoop protein powder, spinach and a bit of maple syrup (thanks to this forum for the smoothie ideas ![]() My parents are coming out for lunch so I'm making butternut squash soup and paninis - ham/cheese, eggplant/proscuitto/parmesan, tomato/eggplant/parmesan, tomato/proscuitto/parmesan. Supper - no idea yet - might be light after this lunch. Carol

I have more if you're interested, but these are the ones I go to most of all! My lasagna recipe is a compilation of 4 different vegan lasagna recipes I got from these sites! | What is your Menu today? I made these muffins this morning. This recipe has been around awhile but it's one of my favorites. Pumpkin Muffins 1 Betty Crocker Spice Cake Mix 1 15 oz can 100% Pure Pumpkin (that's it!) Mix them together and spoon into a 24 count mini muffin pan. (Sprayed with Pam) They will be full to the top. | mudEpawz - I couldn't do vegetarianism, but I've found veganism to be much easier. I think it's because it calls for a complete overhaul in the way meals are thought of and cooked, whereas vegetarianism is cooking the same way but just eliminating meat. If that makes sense. I always cooked before I went vegan but I've completely overhauled the recipes I used to make. I use spices and seasonings all the time and I never used them much before. I've found when you can't rely on cheese as a seasoning you have to cook in a much different way, especially when vegetables are the main dish! I love it...could never go back, ever, to cooking/eating the way I did before. Turns out I'm not making the hashbrown casserole...I made a "green goddess bowl" instead - quinoa, peas, corns, julienned carrots, broccoli, onion, spinach. Seasoned with lemon juice, orange juice, liquid smoke, and some seasonings. Topped with hot sauce and avocado! Soooo full! |

| This evening I'm making: Sweet potato shepard's pie (with ground turkey) for tonight + a few meals this week. A quinoa/red rice/sprouted rice greek salad to have on-hand for work lunches. Boiling some eggs for quick morning grabbing all week. Juicing for Mon-Wed juice. "Mean green" each day + also making a citrus + carrot/apple/ginger. Wow, I better get going... Sydney's evening walk first before dark!
